Especially stable and hard: the blade of our kitchen knife is made with 4116 JFE steel, contains 15% chromium and is rock hard by adding half a percent carbon and 0.2% vanadium. 0.8% molybdenum provides extra protection and makes the cutlery very durable. Professional, but in a handy shape: ideal for professional and hobby chefs for whom too large a Santoku knife is too bulky and exciting.
