Mojo verde and Mojo rojo are typical Canary sauces and are one of the most famous preparations of the recipe book, which makes up the typical cuisine of the Canary Islands. Characterized by a blend of spices that results in intense and sometimes sharp flavors, it is commonly used in numerous dishes such as meat, cooked vegetables or grilled vegetables. One of the main uses of the Canarian mojo is to add flavor to neutral and mild preparations.
